Southwestern Egg Rolls


Ingredients:
2 cups frozen corn, thawed
1 (15 oz) can black beans, drained and rinsed
2 cups reduced fat shredded Mexican cheese blend (I used Weight Watchers brand)
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
4 scallions (green onions), chopped
1 (4 oz) can of green chiles, drained
1 t ground cumin
½ t chili powder
1 t salt
½ t black pepper
¼ t cayenne pepper
24 egg roll wrappers (1 package)

Serving suggestion: I recommend serving these with salsa for dipping. My friends at Wholly Guacamole sent me some samples of their fun new salsa flavors and I ate these with their Roasted Tomato Salsa. It was delicious!



Directions:
1. Preheat the oven to 425. Lightly mist two baking sheets with cooking spray and set aside.
2. In a large bowl, combine all of the ingredients except the egg roll wrappers and stir to thoroughly combine.
3. Pour some water into a small dish and set aside. On a flat surface, place an egg roll wrapper, corner facing toward you (like a diamond) and put ¼ cup of the mixture from the bowl on the center of the wrapper. Spread the mixture in a horizontal line from the left corner to the right corner of the wonton wrapper, leaving ½ inch or so of space on each side. Fold the bottom corner closest to you up over the ingredients and give it a 90 degree roll. Fold the side corners in and tuck them as you give the filled section another 90 degree roll. Dip your finger in the dish or reserved water and lightly wet the edges of the remaining top corner of the wrapper. Finish rolling the filled egg roll over the wet corner so that it adheres. Place wrapped egg roll onto the prepared baking sheet. Repeat with remaining ingredients.
4. When all of the egg rolls are wrapped and on the baking sheets, lightly mist the tops with cooking spray. Bake for 14-15 minutes, flipping once halfway through, until the wrappers are golden brown. Serve with salsa for dipping.

Yields 24 egg rolls. WW P+: 2 per egg roll

Spicy Garlic Shrimp


Ingredients:
.12 shrimp (Jumbo sized, peeled, deveined, & tails intact)
2 tablespoons olive oil
2 garlic cloves (crushed with the side of a knife)
1/4 teaspoon red pepper flakes
1 teaspoon steak seasoning (Montreal Seasoning by McCormick is recommended)
1 teaspoon lemon, zest of
2 teaspoons lemon juice
1 tablespoon fresh parsley (chopped)

Directions:
1.Heat a large skillet over medium high heat.
2.Add olive oil, garlic, red pepper flakes, and shrimp.
3.Season with grill seasoning or salt & pepper.
4.Cook shrimp 3 minutes or until just pink.
5.Toss with lemon zest, juice, & chopped parsley.
6.Remove shrimp to a serving platter, leaving the garlic cloves in the pan.

Fried Corn Nuggets


2 1/2 cups corn
2 eggs, separated
2 tablespoons all-purpose flour
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons vegetable oil

1Combine corn, lightly beaten egg yolks, flour, sugar, salt and pepper in a large bowl.
.2Beat egg whites with an electric mixer set at high speed until stiff peaks form, about 2 minutes.
.3Stir egg whites into corn mixture. Heat oil in a large skillet over medium-high heat.
.4Drop heaping tablespoonfuls of corn batter into skillet. Reduce heat to medium. Cook until nuggets are browned, about 3 minutes per side...

Serves 4

Apple Oatmeal Pancakes


- Ingredients
• 6 egg whites
• ½ cup oatmeal (dry)
• 1 tablespoon unsweetened apple sauce
• Pinch of cinnamon powder
• Pinch of stevia
• 1 apple, diced finely
• ¼ teaspoon baking soda
• Cooking spray

- Directions
1. First heat a frying pan until hot and then reduce to medium temperature. After mixing together all the ingredients in a blender (except for the diced apple), spray some pam (or other cooking spray), drop by spoonful onto the pan.
2. When bubbles start to form, place evenly on pancake some of the diced apple.
3. Let them set in before flipping the pancake.
4. Makes about 4-6 pancakes depending on the size.

7-Day Diet Weight Loss Soup


Ingredients
½ head of cabbage, chopped
1 cup celery, diced
1 cup white or yellow onion, diced
1 cup carrots, diced
1 green bell pepper, diced
2-3 cloves garlic, minced
4 cups chicken broth
14 oz can basil, oregano, garlic diced tomatoes
1 teaspoon oregano
1 teaspoon basil
½ teaspoon red pepper flakes
few shakes of black pepper
½ teaspoon salt (optional)
Instructions
Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add celery, onions, bell peppers, and carrots.
Saute until slightly tender.
Stir in garlic.
Pour in chicken broth.
Stir in tomatoes and cabbage.
Bring to a boil and then reduce heat.
Cook until cabbage is tender.
Stir in oregano, basil, red pepper flakes, black pepper and salt (if using)
Taste broth and adjust seasoning if needed.
Serve and enjoy!

Outback Steakhouse Bloomin Onion


Batter
1/3 cup cornstarch
1 1/2 cups flour
2 teaspoons garlic, minced
2 teaspoons paprika
1 teaspoon salt
1 teaspoon pepper
24 ounces beer
4 vidalia onions (I use walla wallas here in Calgary)

Seasoned flour
2 cups flour
4 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne

Creamy Chili sauce
1 pint mayonnaise
1 pint sour cream
1/2 cup tomato chili sauce
1/2 teaspoon cayenne

Outback Dipping Sauce
1/2 cup mayonnaise
2 teaspoons ketchup
2 teaspoons creamed horseradish
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon dried oregano
1 dash black pepper
1 dash cayenne

Directions:

combine flour, paprika, garlic powder, pepper and cayenne-mix well.
--------Creamychili sauce--------.
combine mayo, sour cream, chili sauce and cayenne-mix well.
--------Dippingsauce----------.
Blend everything together well and let sit for 2 hours-refidgerated- or overnight.
--------Andfor the batter---------.
Mix cornstarch, flour and seasonings until well blended.
Add beer and mix well.
Cut about 3/4 inch off top of onion and peel.
Cut into onion 12-16 vertical wedges but do not cut through bottom root end.
Remove about 1 inch of petals from center of onion (You can place the cut onions in cold water for a few hours to help "open" them up -- just make sure that you drain them well).
Dip in seasoned flour and gently shake to remove excess.
Seperate peatls to coat thoroughly with batter.
Gently place in a fryer basket and deep fry at 375-400 for 1 1/2 minutes.
Turn over and fry 1 1/2 minutes more or until golden brown.
Drain on paper towels.
Place onion upright in a shallow bowl and remove center core with a circular cutter or apple corer.
Serve hot with chili sauce and dipping sauce.

Crunchy Honey Garlic Pork Chops

Crunchy honey garlic pork chops:
And you can use chicken

Ingredients:
6-9 pork chops (not too thick, you can use boneless pork loin)
2 eggs
4 Tbs water
2 cups flour
1 tsp. salt
1 tsp. black pepper
1 tsp. garlic powder
Canola or vegetable oil for frying chops

Glaze:
1 1/2 cups honey
1/2 cup brown sugar (I added this)
1/2 tsp. ginger
dash of cayenne pepper (to your taste)
1/2 cup soy sauce
1 Tbs chopped garlic
2 Tbs butter

Whisk the eggs and 4 Tbs. water together in a shallow dish.

Mix the flour, salt, pepper, and garlic powder in another shallow dish.
Dip the chops in the flour, then over into the egg.

Then back over into the flour mixture once again. This is what puts the extra crispy coating on the chops. Be sure to get plenty of flour on in this last coating, then shake them a little and place in a pan with about a half inch of oil. Be sure the oil is hot, but not too hot or the chops will cook too fast. You need to get it good and hot and then turn to about medium.

Cook for about 6 minutes on each side. Try not to turn more than twice or your breading will come off.
Remove from the pan to a 9"x13" baking dish.

Saute the garlic a little in the butter.

Add the honey, soy sauce, brown sugar, cayenne, and ginger. Bring to a boil then reduce to low and simmer for about 5 minutes. Watch this carefully because it will foam and might boil over.

Pour 1/2 of the glaze over the pork chops. Flip them over and pour the other 1/2 over the other side. Place uncovered in a preheated 350 degree oven for about 20-25 minutes. This sets the glaze and finishes them to be sure they are cooked through.
